Design District. Owner Joe Lazzara, a
product of corporate employment for twenty years, has always enjoyed
cooking with "premium ingredients". Joe knew from his own
experience there was a need for Quality, Service, and Selection of "premium ingredients".
Joe's Butcher Shop fresh products will enhance your eating experience
whether you are a top-tier restaurant chef or a do-it yourselfer at home. Joe noticed the grocery industry undergoing changes. High-cost Quality, Service, and Selection were victims of these changes. Consolidation, demands by venture capital investors, and "big box" retailers' cost cutting resulted in a meat supply system where meat is cut in a processing plant, shrink wrapped to Styrofoam, shipped to stores, and case stocked. Their systems are 'cost efficient', but a shortened aging period reduces flavor, and factory-cutting adds DAYS of exposure before you cook the meat. They have eliminated the butcher who fresh-cut meat at each store location. In late 2005 Joe met with Fritz Albright and discussed his vision of a full-service butcher shop and fresh fish market. Fritz is part of the family who owned Albright's One-Stop in Corunna, Indiana for many years. Fritz's father began the business and Fritz ran the business for years until he decided to "semi-retire" and pursue his passion to raise Thoroughbred Racing Horses.
