
Joe's Cooking 101
There are basically three simple methods for cooking Joe's Reserve 100% Natural Baby Back Ribs. Boil then Grill, Bake the Grill, or Grill then Bake. Boiling then grilling cuts down on time, but also flavor because some fat is boiled away (fat provides flavor). Baking then grilling can alleviate flare ups on the grill because fat melts and is distributed in the pork during the baking process. Others prefer the crisp charring that occurs on the grill first then finish in the oven.
1) Boil then grill: Bring a large pot of water to boil. If necessary, cut rack in half to fit in pot so ribs are submerged. Boil for 1 1/2 - 2 hours. Finish on grill turning often and layering on this layers of wet sauce.
2) Bake then grill: Pre-heat oven to 225 degrees. Rub ribs with olive oil, rub in Kosher, coarse, sea salt and ground black pepper. Double wrap ribs in aluminum foil. Place ribs on middle rack. Place cookie sheet under rack to catch any drippings. Bake for 4 hours. Finish on grill turning ribs often and layering on thin layers of sauce.
