Joe's Foolproof Steak

 

Rub the steak with a thin coat of olive oil. Press freshly ground black pepper into the steak and sprinkle with Kosher/coarse/sea salt. Because it’s coarse, Kosher/coarse/sea salt is said to be crucial. Make sure the steak is at room temperature when you put it on a preheated grill. For maximum flavor, serve rare or medium.  To retain more juices in the steak, sear in a skillet on medium-high heat before placing on the grill.  Pull steak 8-10 degrees before it is done and let rest for 8-10 minutes.  The steak will continue to increase in temperature to reach desired done temperature and the juices will re-distribute throughout the meat while it rests.
